Baked Turkey Sandwiches

Are you tired of the same old turkey sandwiches? Why not try these treats with a crunchy baked cereal outside and a soft creamy turkey filling inside. Great for using up some of that left-over holiday dinner.



  • 1 1/2- 2 cups cooked turkey, diced finely
  • 1 TBSP cooking oil
  • 1 TBSP flour
  • salt and pepper to taste
  • 1/4 tsp onion powder
  • 1/2 teaspoon chicken bouillon powder
  • 3/4 cup skim or 2 % milk
  • 2 TBSP cranberry sauce
  • 1/4 cup spreadable margarine
  • 8 slices whole wheat (or white) bread, crusts removed optional
  • 3 large eggs
  • 1/4 cup water
  • 4 cups crushed Corn Flake or Bran Flake cereal



Heat a saucepan over medium heat and add oil. When hot, add the cooked turkey and stir-fry until warm. Sprinkle the flour, salt and pepper, onion powder and bouillon powder over this and stir well until heated. Add the milk and stir constantly until well thickened and to the boiling point. Remove from heat and add the cranberry sauce. Spread the mixture thinly onto a plate and place in the freezer to cool. Or, the mixture can be made the night before and placed in the fridge to cool.

Preheat oven to 325F. Place the bread on a counter top and remove crusts if you want to. Spread one side with margarine, then spread 4 of the slices with the turkey mixture. Cover them with the remaining bread slices, margarine side down onto the turkey mixture. Cut the sandwiches in half.
Beat eggs and water in a shallow bowl. Dip the sandwich halves in this, then roll in the crushed cereal, pressing extra cereal right into the bread. Place on a greased baking sheet and bake for 30 minutes until browned.

Serve with extra cranberry sauce for dipping, and a glass of sparkling white wine with a cranberry added to the glass. Enjoy!
