Home Made Oreos

My family has always called these home-style Oreo cookies "Whoopee Pies" because when Mom makes them, everyone yells "Whoopee." They are a fast and wonderful treat. Use store bought canned icing for an even faster version!



1 1/2 cup white sugar
2 eggs
1/2 cup margerine
1/2 cup cocoa
1/2 cup hot water
1/2 cup sour milk ( or add 1/4 tsp vinegar to regular milk)
1 tsp vanilla extract
3 cups flour
1 tsp baking soda
1 tsp salt
1 tsp baking powder

Filling Icing:
1/4 cup margarine
2 egg whites
1 tsp vanilla extract
2 cups icing sugar



Beat together the sugar and eggs until frothy. Add the margarine, cocoa and hot water and stir until well mixed and the margarine has melted. Add the milk and blend well.
Mix the flour, salt and baking powders together first, then add to the wet mixture. Drop teaspoons of cookie dough onto an ungreased cookie sheet. Bake 13 minutes at 300 degrees.
For the filling, blend with a hand mixer until smooth and thickened.
When cooled, spread the filling on the flat side of one half and cover it with the flat side of another. And that's it! These freeze well. Enjoy!
