Heloise Spaghetti Sauce

This is my all-time favourite spaghetti sauce recipe. The flavour from vegetables, bacon, ground beef and red wine mingle to make an extraordinary culinary delight. This recipe may be frozen and is great served over cooked pasta or rice. And of course, don't forget the candles and that bottle of Italian Luna Rossa.



1/4 cup olive oil
1/2 cup butter
1 cup chopped onion
1 lb. ground beef
4 strips bacon- chopped
4 cloves garlic, minced (at least!!)
3 tablespoons dried parsley
1 tablespoons salt
1/4 teaspoon pepper
2 oz. dry red wine
1 cup canned tomatoes
1 cup tomato puree (sauce)
2 tablespoons tomatoe paste
1 carrot finely chopped
2 celery stalks finely chopped
plus any other vegetable you want to use- finely chopped (cauliflower, zucchini, green or red peppers etc.)



Warm oil over low heat. Add butter and simmer until melted. Add onion and cook until soft. Add beef and bacon and cook until browned. Add spices and cook 10 minutes on low heat. Add wine and COVER and steam for 3 more minutes. Add all tomato products. Bring to a boil and add vegetables. Cover and cook on low heat for 1 hour, stirring occasionally. I find it's evn better when cooked the day before being served!
