No No No Oat and Blueberry Cookies

These banana oatmeal cookies were discovered when a friend had to go on a special diet for allergies. No flour, sugar or dairy was allowed. These cookies were a real score for her and I have to admit, because they're so "guilt free" I eat them by the handful!

 

Ingredients

  • 2 cups oats (I used quick cook 3 min)
  • 3/4 tsp baking soda
  • 1 tsp. cinnamon
  • 4 medium overripe bananas (mashed)
  • 1/4 cup unsalted, hulled sunflower seeds
  • 1/4 diced chopped dates
  • 1/4 cup frozen blueberries (optional)

 

Instructions

Preheat the oven to 350F. Line a baking sheet with parchment paper and spray with non-stick coating.

Use a good blender or food processor to blend the oats into a fine flour. Add the soda and cinnamon. Pour into a bowl.

Blender the bananas until smooth. Add to the oat mixture along with the rest of the ingredients. Mix well and drop by teaspoonful onto the parchment paper.

Bake for 12 minutes. Cool cookies on wire racks, then store in the fridge in an airtight container.
