No No No Banana Date Cookies

Another great creation in the line of No No No baking, meaning No added sugars, No dairy and No gluten. Although high in natural sugars with the dried fruits, these cookies will soothe any sweet tooth without the unnecessary other additives.



3 bananas mashed
1 tsp vanilla (pure if possible)
1/2 tsp salt (sea salt if possible)
1 Cup unsweetened shredded coconut
1 cup chopped packed dates
1 cup chopped dried fruit (cranberries or pineapple are suggested)
1 cup raisins or currants
1/2 cup chopped walnuts (or pecans)
1 cup rolled oats (quick cook or large oats)



Mash the bananas. Stir in the vanilla and salt. Add the remaining ingredients except for oats. Mix together. Add oats. Mix one last time.
Lightly spray a cookie sheet with a cooking oil. Roll a teaspoon of mixture into a hard round ball and place on cookie sheet.
Bake at 350 F for 22-25 minutes or until lightly toasted.
Cool on wire racks before storing in the fridge in an airtight container.
Makes 3 dozen balls.
