Millet Flatbread

Easy replacement for bread or tortillas when serving guacamole, tzatziki or other spread.



1/2 cup millet FLOUR
1 cup boiling water
1 TBSP minced fresh garlic
pinch of sea salt



Bring the water to a boil in a small saucepan. Toss in the millet and stir for two minutes on LOW heat. Remove from heat and add garlic and salt before transferring to a bowl to cool down.
Once handle-able, roll into two inch small balls. Place one ball at a time between sheets of waxed paper and use a rolling pin to flatten as much as possible.
Warm a frying pan or pancake skillet. Spray with coconut oil or use a tsp of jarred coconut oil. Once hot, fry pancake on one side, before gently flipping over to brown the other side. Flip a few times if needed to get them browned.
